In many bakeries, cream cakes, cream slices and other baked goods requiring refrigeration are kept within easy reach in the sales area, whilst at the same time dough pieces are held back at low positive temperatures for final proving. These are two very different tasks, which in a small bakery often have to share a single fridge. The Liebherr BRPSvh 6501 covers both tasks: a bakery refrigeration and storage cabinet with a net capacity of 380 litres, forced-air cooling and a temperature range of minus 5 to plus 14 degrees.

One temperature range for multiple tasks

The refrigeration compartment can be set between -5 °C and +14 °C. This covers both the traditional cold storage of cream and custard products at a few degrees above zero and the controlled holding of dough pieces at lower positive temperatures – one reason why the cabinet can be flexibly integrated into various bakery workflows without the need to purchase a second unit.

380 litres in a compact footprint

With a footprint of just 69.7 x 86.7 cm, the BRPSvh 6501 offers a net capacity of 380 litres (602 litres gross). Twenty L-shaped shelving rails made of chrome-nickel steel can each support up to 60 kg; the longitudinal slide is designed to accommodate baking trays measuring 400 x 600 mm, the standard size for cake and tart trays. With a height of 211.5 cm and an internal dimensions of 150.4 x 40.7 x 65.0 cm, the cabinet also fits into narrower recesses between the sales counter and the bakery, without making any noticeable compromises in terms of usable capacity.

Dynamic cooling for consistent temperatures

The cooling system operates dynamically, actively circulating the air within the interior. This ensures a more even temperature distribution between the individual shelves than with purely static cooling – an important factor when delicate cream-based products are stored on several levels simultaneously and must be kept at the same temperature throughout.

Chrome-nickel steel and automatic defrosting

The housing, door and inner container are made entirely of 1.4301 (AISI 304) chrome-nickel steel, which is robust and easy to clean. The refrigeration unit defrosts automatically; no manual intervention is required during operation. This also makes day-to-day bakery operations easier, as there is rarely time for time-consuming maintenance.

Digital display, alarm and connectivity

The internal temperature is displayed digitally on the outside; in the event of a fault, the cabinet issues a visual and audible warning. Thanks to the integrated, removable networking solution with a Wi-Fi/LAN interface, the BRPSvh 6501 can be integrated into an existing monitoring system, for example to centrally document temperature trends across multiple refrigeration units.

Well thought-out for everyday use

The adjustable feet are height-adjustable between 115 and 175 mm, allowing the cabinet to be levelled securely even on uneven floors. The door hinge is reversible, allowing it to be adapted to the specific layout of the retail or production area. A handle strip ensures easy opening, whilst a mechanical lock secures the refrigeration compartment against unauthorised access when required, for example outside opening hours.
